Sea Beans & Fried Rice Noodles

5 Tbsp. peanut oil
2 minced garlic cloves
3 seeded & sliced red chilies
2 medium sliced onions
3 eggs beaten
6 oz. barbecued pork, chopped
1.5 cups fresh bean sprouts
2 lbs. fresh rice noodles
3 Tbsp. soy sauce
1 Tbsp. oyster sauce
1 cup sea beans blanched
4 chopped green onions

Heat 1 Tbsp. oil in a large skillet or wok. Stir fry garlic, chilies and onions until golden brown. Add pork and stir rapidly for 2-3 minutes, add bean sprouts, and sea beans and stir for additional 2-3 minutes adding oyster sauce. Remove from wok.

Heat remaining oil in wok or skillet and stir in noodles over high heat. Add 3 beaten eggs and cook until just set, add 3 Tbsp. of soy sauce and toss quickly.

Combine cooked vegetable/pork with the noodles and mix together quickly. Serve with garnish of chopped green onions.
