French Horn, Chicken and Ginger Sauté

1 Tbsp. peanut oil
1/4 cup finely chopped onion
1 inch piece ginger, peeled and diced fine
2 cloves garlic, finely chopped
1/2 lb. French Horn mushrooms, thickly cubed
1/2 green pepper & 1/2 red pepper sliced
1 chicken breast
1 Tbsp. oyster sauce
1 Tbsp. soy sauce
1/2 Tsp. sugar
2 green onions sliced finely
2 red chilies, sliced

Poach chicken breast in 1 cup water for 5 minutes or until juice just runs clear. Set aside.

Heat oil in a sauté pan and cook onion and ginger until both are soft.

Add peppers and mushrooms and sauté for additional 5-6 minutes.

Add oyster sauce, and sugar and stir until chicken breast colors... 1-2 minutes.

Add green onions to the medley and stir in. Remove after one minute. Garnish with additional green onion and slices of chili. Dish can be served over rice or with rice on the side.
