Pork Chops Simmered in
Chanterelle Apricot Hazelnut Sauce
The slightly apricot flavor
of chanterelles is enhanced while the complete sauce makes a bold
complement to pork.
Serves four.
4 pork chops, center cut
2 tablespoons olive oil
2 cloves garlic, minced
3 tablespoons marsala
1 1/2 tablespoons finely chopped dried apricots
2 tablespoons butter
6 ounces chanterelles, coarsely chopped
2 tablespoons chopped hazelnuts
1/2 cup fruity Riesling wine
1/2 cup chicken broth
Saute garlic in olive
oil for 1 minute and add pork chops, browning on both sides.
Remove pork chops and deglaze pan with marsala.Add butter to pan.
When melted add apricots, chanterelles and hazelnuts. Saute for
2-3 minutes and add wine and chicken broth.
Return pork chops to pan and simmer over lowest heat for 30 minutes
or until tender. Place pork chops on serving platter. Turn up
heat and reduce sauce slightly. Pour over pork chops and serve.
Time required: 15 minutes preparation; 30 minutes simmer
